Our 'chefs' will be two pillars of local cuisine and will give us the true flavours of yesteryear. Inevitable wine explained by Umberto Trombelli, Italy's best oenologist, who will illustrate the connection between wine and tannins and where the hints of leather and skin that we find on the nose and palate come from.
